Bamboo shoot pickle

Ingredients ---
1. Bamboo shoots 3 no.
2. Garlic 100gm
3. Salt
4. Mustard  oil
5. Fresh red chilli
6. White mustard
7. Lemon 5 no.
Method ---
Peel and through out unwanted portion of bamboo shoot.
Fine chopped the bamboo shoot.
Chopped bamboo shoot put in to the salted water for half-hour.
After half-hour bring to boil about 20 minutes. It's ensure that shoot are become tender.
Remove from heat and refresh with water.
Now transfer all shoot to another container. Add some salt and lemon juice . keep it air tight container for 3 to 4 days.
After 4 days shoot are well fermented. you can strain the shoot from water. Shoot are little dried under sunlight.
Now grind white mustered seeds .
Heat half of mustered oil and add to the fermented shoot . and add fresh red chill, grind mustered, garlic, half of remaining mustered oil, salt to taste.
Keep it in  air tight container for 15 day's.
The shoot container heated under sunlight for 15 day's . if you heated another 15 day's under sunlight pickle are good enough.
Now it's ready for serve.

Pork Curry with bamboo shoot

Ingredients

1. Pork meat 500gm
2. Onion 2 no ( chopped)
3. Garlic minced 4 tsp
4. Ginger minced 2 tsp
5. Pickle bamboo shoot 3 tsp
6. Salt to taste
7. Mustered oil 5 tsp
8. Thai brinjal 5 no
9 tomato 2 no ( cubes)
10. Green chilli 5 no.

Method

Clean and wash the meat . heat water with salt and put meat in the salted water.
Bring to boil for half-hour.  If meat cook about 80% . removed from heat . separate the meat and water.
Heat oil . put onion . sauted the onion up to golden brown. Add garlic and Ginger . sauted for 30 second . add Thai brinjal and green chilli. Sauted for 30 second. Sprinkle some water to prevent burning .
Add boil pork meat . sauted for 1 minutes. Add some water and cook for 30 minutes. Now put salt , bamboo shoot , tomato. Cook for another 20 minutes. Remove from heat and serve with steam rice.

NARIKOLOR LARU

NARIKOLOR LARU ------( ASSAM)



1) narikolor laru --- ( coconut laddu)
     (  for 30 no)

ingredient ---

1) fresh grated coconut ---  350gm
2) sugar ---  420 gm
3) chmphor (korpur) --- 2 small no.

method ---

1) mix all ingredient all together.
2) saute on low heat for 20 mints
3) when its become a sticky, remove from heat , and immediately make a small size coconut ball.

Poora mach

Poora mach (Mizoram)
ingredient---
1) 250 gm boneless fish
2) 2tsp white mustard seeds
3) half bunch coriander leaves
4) 3 green chilly
5) 4 flakes garlic
6) 2tsp lime juice
7) 2tsp mustard oil
8) salt to taste
method---

1) clean the fish
2) apply lime juice on the fish
3) soak mustard seeds and make a paste
4) coriander leaves , garlic, green , chilly , salt, make a paste all together.(peste 1)
5) mustard oil , mustard peste and peste 1 mix all together.
6) apply all peste to the fish.
7) the fish wrapped with banana leaves and put in to the open fire .( if open fire is not possible , the fish wrapped with silver foil and put in to the oven at 180c. for 10 mnute.
